Apple Cinnamon Muffins

These Apple Cinnamon Muffins are delicious… full of moist apple chunks and lots of cinnamon! Make a batch of these muffins for a quick grab and go breakfast.

How to make Apple Cinnamon Muffins

To begin, preheat the oven to 350 degrees. Then, line your muffin tin with muffin liners or spray with non-stick spray. Then, wash, peel and dice the apples. These muffins require one extra step than normal and that is sautéing the apples and cinnamon in a pan for a few minutes to soften them before they are added to the batter. Sauté the apples for about 10 minutes with the butter and cinnamon. Remove them from the heat and set aside to cool.

Next, cream together the butter and sugar until light and fluffy. Then, add in the milk, eggs and vanilla extract. Stir to combine. Gently fold in baking soda and flour being careful to not overstir. Next, gently stir in apples. Divide among 12 muffin cups. Bake the muffins for 18-22 minutes or until done and lightly golden. Cool and enjoy!

If you don’t think you will finish these muffins within a few days, place them in an air tight container and freeze for later. They will stay in the freezer for a couple months and can be pulled out to defrost the night before you want them!

Apple Cinnamon Muffins

These Apple Cinnamon Muffins are delicious… full of moist apple chunks and lots of cinnamon!

Ingredients

  • 1 tbsp butter
  • 1 1/2 cups apples, peeled, cored and chopped (I used honeycrisp apples)
  • 1 tsp cinnamon
  • 5 tbsp butter
  • 1 cups sugar
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 1/2 cups flour

Instructions

  1. Preheat oven to 350 degrees.

  3. Melt butter in saute pan and add apples and cinnamon. Cook on medium until apples begin to soften, about 10 minutes.
  4. Cream together butter and sugar.
  5. Add in milk, eggs and vanilla extract. Stir to combine.
  6. Gently fold in baking soda and flour. Do not overstir.
  7. Gently stir in apples.
  8. Divide among 12 muffin cups.
  9. Bake 18-22 minutes or until done and lightly golden.
  10. Cool and enjoy!

Notes

These muffins can be frozen if there are extra!
