How to Make Bacon and Cheese Loaded Mashed Potatoes
All you need to do is chop up and boil your potatoes until they are soft. Then, drain them and return them to the pot. Add all of the remaining ingredients and mash until your preferred texture. I prefer to leave the peels on the potatoes for the extra fiber and texture, however feel free to peel away!
This recipe will make a batch large enough for 6-8 people or to have lots for leftovers! Feel free to add more cheese, bacon and sour cream when you serve them. Enjoy!

- 2.5 lbs potatoes, chopped
- 5 tbsp butter
- 1/2 cup Greek yogurt
- 1 1/2 cup shredded cheddar cheese
- 4 slices cooked bacon, chopped
- Salt and pepper to taste
- Chop potatoes and add to large pot with water. Bring to a boil and cook until tender.
- Drain potatoes and return to pot.
- Add remaining ingredients and mash with a potato masher or fork until desired consistency. Season with salt and pepper to taste.
- Serve and enjoy!
A stand mixer can be used to mash and mix the potatoes as well.
