These Chocolate Sunbutter Cups are vegan, nut-free, delicious and only require 4 ingredients to make! Have a batch of these made and store them in your refrigerator for a quick treat.

Ingredients

  • 1/2 cup dairy-free chocolate chips and
  • 1/3 cup dairy-free chocolate chips (divided)
  • 2 tsp coconut oil (divided)
  • 1/3 cup sunbutter
  • 2 tbsp powdered sugar

Instructions

  1. Put paper liners into 12 mini muffin cups or 6 large muffin cups.
  2. Melt 1/2 cup chocolate chips with 1 tsp coconut oil. Microwave at intervals of 15-20 seconds and stir frequently.
  3. Divide chocolate among lined muffin cups. Use a knife or spoon to spread the chocolate up the sides of the liners.
  4. Put muffin pan in refrigerator to let set.
  5. Combine sunbutter with powdered sugar and stir well. If sunbutter is sweetened , sugar may not be needed.
  6. Divide sunbutter into chocolate lined muffin cups.
  7. Melt remaining chocolate and coconut oil and divide into muffin cups.
  8. Refrigerate to let chocolate set.
  9. Once chocolate is set, remove from muffin pan and store in the refrigerator for up to two weeks.
