Make Your Own Spice Rub

This simple beef recipe does not call for many ingredients. Of course you will need beef and beer. Then, we will be making our own spice rub that will add lots of extra flavor to the meat. For this you will need:

  • onion powder
  • garlic powder
  • cayenne pepper
  • salt
  • pepper

How to Make Slow Cooker Beef and Beer

First, combine all of the spices together in a small bowl and stir to combine. Then, if necessary trim any really large pieces of fat and silver skin off of the beef. Removing the large pieces of fat will help make sure that the spices end up on the meat. Also, removing the silver skin is very important. It will have a silver color to it. These pieces do not get tender as they cook and tend to be very tough.

Next, rub the spice rub all over the beef making sure to coat all sides. Place the beef in the crock pot and pour in a can or bottle of beer. You can use all different beers for this recipe. Anything you have on hand. Guinness beer is a very popular choice to pair with beef, but not necessary.

Cook the beef on low for 8-10 hours or on high for 4-6. The cooking time will depend on how thick the cut of beef is. Check it at the shorter times and determine if it needs longer based on the tenderness of it. We prefer to cook our beef on the full time so that it is super tender. This will give you the option to shred it.

What is the best cut of beef to use in a crock pot?

The best two options are top round roast or chuck roast. Both cuts have lots of marbled fat that breakdown well in the crock pot and keep the meat tender.

How long do I cook beef in the crock pot?

This can depend on the size of your cut. I recommend 4-6 hours on high or 8-10 hours on low. Check on the shorter end and see how tender the piece of meat is. If it is not tender yet, continue cooking. I recommend cooking on low over high as well because the slower approach yields a more tender piece of beef.

We used a pale ale however any beer you enjoy will work well for this recipe.

Ingredients

  • 2.5 pounds chuck roast or bottom round roast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • 2 teaspoons salt
  • 1/2 teaspoon pepper
  • 12 oz beer (any kind)

Instructions

  1. Combine together onion powder, garlic powder, cayenne pepper, salt and pepper in a small bowl. Stir to combine.
  2. Trim any large pieces of fat off the beef as well as any silver skin. These silver skin pieces do not cook to be tender and stay tough. They are best removed before cooking.
  3. Rub the seasoning on all sides of the beef roast.
  4. Place beef in crock pot and pour beer into crock pot.
  5. Cook on low for 8-10 hours or on high for 5-6 hours.
  6. Slice or shred and serve.

Notes

Any kind of beer can be used for this recipe. Use your favorite!
