Ingredients for Gluten-Free Oatmeal Chocolate Chip Cookies

There are no hard to find ingredients in this recipe. Most, if not all, should already be in your pantry especially if you already bake gluten-free. For this recipe you will need:

  • Gluten-Free Oats- we like the Bob’s Red Mill brand.
  • Gluten-Free Flour- we like either King Arthur or Pillsbury brand.
  • Brown sugar
  • Granulated sugar
  • Butter- for dairy-free use country crock plant based butter.
  • Egg
  • Vanilla extract
  • Cinnamon
  • Baking soda
  • Salt
  • Chocolate Chips– for dairy-free be sure to use a dairy-free chocolate chip such as Enjoy Life brand.

If you are not gluten-free, regular oats or flour can be used instead for this recipe with no other changes.

How to Store Cookies

The best way to store cookies is to let them cool completely after baking then place them in an airtight container. Keep the container in a cool and dry place for up to 5 days. Cookies can also be frozen in an air tight container.

I am not gluten-free, can I use regular flour and oats?

Yes, and it should not affect the texture or recipe at all!

I am a vegan, can this recipe be made with a flax egg?

I have not tested this variation but I think it would work okay. If you try it please let us know how it works!

Absolutely! Nuts, raisins, dried fruit or other kinds of chocolate can be used as mix-ins for this recipe!

Ingredients

  • 1 cup brown sugar, packed
  • 1/2 cup sugar
  • 3/4 cup butter- plant based butter if dairy-free
  • 1 egg
  • 2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 3 cups gluten-free oats
  • 1 cup gluten-free flour
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2/3 cups chocolate chips- dairy-free if needed

Instructions

  1. Preheat the oven to 350 degrees.
  2. In a stand mixer or with a hand mixer combine together brown sugar, sugar, butter, egg and vanilla. Mix until light and fluffy.
  3. Add remining ingredients and stir until well combined.
  4. Drop by tablespoon onto baking sheet.
  5. Bake for 12-14 minutes or until slightly golden.
  6. Let cool and serve.
  7. Store leftovers in an air tight container for up to 5 days.

Notes

Cookies can be made with other mix-ins such as raisings, dried fruits, nuts etc. in place of the chocolate chips.
