How to Make Quick and Easy Hamburg Soup

First, chop up the onion, carrots and celery. Next, heat 2-3 tablespoons of olive oil in a large pot over medium heat. Add vegetables, salt and pepper and cook, stirring every couple minutes. Cook until the vegetables start to become tender and fragrant. About 10 minutes.

Then, add your ground beef and cook until browned and broken up into little pieces.

Then, add your crushed tomatoes, beef broth and bay leaves and bring to a boil. Once the soup is boiling turn the heat to low and let it simmer for 20-30 minutes.

Now it’s time to cook your pasta. Cook the pasta in a separate pot according to the package directions. I prefer to cook the pasta separate and keep them separate in the refrigerator so that the noodles stay al dente instead of absorbing all of the liquid from the soup. Also, I use ditalini noodles but any small pasta will work if you can’t find that shape.

Finally, once your pasta is done pour 1/2-1 cup of noodles into your bowl and top with soup. If desired, sprinkle with parmesan cheese. Enjoy!

This soup could definitely be made in the crock pot as well as on the stove. All you would do is brown the beef then add everything to the crock pot and cook on low for 4-6 hours.
