I love Mediterranean food and this Lemon Grilled Chicken hits the mark! There’s just something about the cheese, olives, tzatziki, pita… mmmm!

How to make Lemon Grilled Chicken

This recipe is for a super easy chicken marinade that I use on bite size pieces of chicken. Simply combine all of the ingredients and let marinade for at least 20 minutes for up to 8 hours. (It could be prepped in the morning to grill for dinner!) Then, cook on skewers on the grill.

Also, if it’s raining or you don’t have a grill these can still be done on skewers in the oven. Bake at 350 degrees and rotate every 10 minutes until cooked through. Or, even saute them in a pan on the stove. Be sure to cook your chicken until it is cooked through and reaches a temperature of at least 165 degrees. 

My favorite way to eat this chicken is in a big bowl with spinach, feta cheese, kalamata olives, cucumber, tomato, seeds, and tzatziki.

Here’s my lunch one day with the chicken in a salad. I didn’t have tzatziki to use in place of dressing so I drizzled it with a little olive oil and balsamic. One of the best parts of this recipe is that the chicken is great leftover either cold or reheated!

Lemon Grilled Chicken

Prep Time: 15 minutes
Cook Time: 20 minutes
Additional Time: 4 hours
Total Time: 4 hours 35 minutes

Simple Lemon Grilled Chicken perfect as a meal or for salads!

Ingredients

  • 1 1/2 pounds chicken, cut in bite sized pieces
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 2 tsp oregano
  • 1 tsp garlic salt

Instructions

  1. Combine all ingredients.
  2. Let marinate for 20 minutes- 8 hours.
  3. Put chicken on skewers.
  4. Grill until cooked through (internal temperature should reach 165 degrees).
  5. Enjoy!

Notes

The longer the chicken marinates the better the flavor will be!
