Microwave Mint Chocolate Fudge

Microwave Mint Chocolate Fudge can be made in the microwave and only needs 5 ingredients. It has a thick layer of chocolate mint fudge on the bottom with a thin layer of white chocolate on top and finished with crushed peppermint.

How to make Microwave Mint Chocolate Fudge

Before starting to make the fudge, line an 8 x 8 pan with wax paper. This will make it easy to remove the fudge from the pan once it is finished. Then, combine the semi-sweet chocolate chips, peppermint extract and condensed milk in a microwavable bowl (glass works best). Microwave the mixture about 30 seconds at a time stirring well in between until it is melted together. It should only take about 3 or 4 times in the microwave. Immediately pour the mixture into the wax lined pan and put it in the refrigerator to cool.

Let the fudge set for about 30 minutes in the refrigerator then melt the white chocolate chips in the microwave, about 15-20 seconds at a time, stirring in between each time. Pour white chocolate over the fudge layer and then top with crushed peppermint candy. Candy canes or the round mints will work perfectly.

Refrigerate the fudge again until the white chocolate hardens. Once it is ready, use the wax paper to lift it out of the pan and then cut the fudge into desired size pieces.

How to Store Fudge

Fudge is best stored at cooler temperature. Here in South Florida I like to keep the fudge in the refrigerator.However, if you live in a cooler climate it may be fine to keep in an airtight container on the counter as long as it’s not warmed by the sun or a cooking surface.

Fudge will stay good for up to 10-14 days depending on the temperature it is stored at.

Ingredients

  • 11 oz semi-sweet chocolate chips
  • 2/3 cup sweetened condensed milk
  • 1 tsp peppermint extract
  • 1/2 cup white chocolate chips
  • 1/4 cup crushed peppermint candy

Instructions

  1. Line an 8 x 8 pan with wax paper. This will make it easy to remove the fudge from the pan once it is finished.
  2. Combine the semi-sweet chocolate chips, peppermint extract and condensed milk in a microwavable bowl (glass works best). Microwave the mixture about 30 seconds at a time stirring well in between until it is melted together. It should only take about 3 or 4 times in the microwave. Immediately pour the mixture in an even layer into the wax lined pan and put it in the refrigerator to cool.
  3. Let the fudge set for about 30 minutes in the refrigerator.
  4. Then melt the white chocolate chips in the microwave, about 15-20 seconds at a time, stirring in between each time. Pour white chocolate over the fudge layer and then top with crushed peppermint candy. Candy canes or the round mints will work perfectly.
  5. Return the fudge to the refrigerator and let the white chocolate harden.
  6. Once set, remove and use the wax paper to pull the fudge out of the pan. Cut into desired size pieces.
  7. Store in air airtight container in the refrigerator or on the counter. Fudge is good for at least 10-14 days.

Notes

Dark or milk chocolate can be substituted for the semi sweet chocolate chips.
