How to make One Pot Black Bean and Corn Soup
This soup could not be more easy to make! First, simply combine all of the ingredients except for the chicken (if you are adding chicken) in a large pot. Then, cover and bring to a boil. Stir, lower heat and let cook for 20 minutes. Next, add the chicken and let cook for 5 more minutes to heat the chicken. Finally, serve with desired toppings.
We topped this soup with shredded cheese and tortilla strips. Or top it with sour cream, hot sauce, chopped onion or jalapenos. The options are endless!
Recipe substitutions
Many adjustments and substitutions can be made to this recipe. Consider these options:
- For a vegan or vegetarian soup: use vegetable broth instead of chicken broth and skip adding chicken. Tofu can be added and vegan cheese could be used as a topping.
- To make it more spicy add more chili powder or a few diced jalapenos. For a less spicy soup skip the chili powder all together!
- Any cooked protein can be added to this soup for the last few minutes of cooking. This includes ground beef, turkey or chicken, tofu, stewed beef. Anything you prefer! This is a great meal to use up any leftover protein you may have cooked in your refrigerator.

Ingredients
- 3 cups chicken bone broth (or vegetable broth)
- 28 oz can crushed tomatoes
- 15.5 oz can black beans, drained and rinsed
- 1/2 onion, chopped
- 2 cups frozen corn
- 3 cloves garlic, chopped
- 1/2 tsp chili powder
- 2 tsp cumin
- 1 tsp salt
- 1 cup chicken, chopped
Instructions
- In a large pot, combine all ingredients except for chicken.
- Cover and bring to a boil over medium heat. Once boiling, lower heat, stir and cook for 20 minutes.
- Add chicken and cook an additional 5 minutes to heat chicken through.
- Remove from heat and serve. Top with cheese, tortilla strips, sour cream , onions, etc.
