Ingredients for Oven Baked Egg White Bites

All you need is seven ingredients for this quick and easy breakfast recipe. You will need:

  • egg whites
  • salt
  • black pepper
  • roasted red bell peppers
  • bacon
  • cheese.

For the egg whites, either leftover egg whites or the liquid egg whites from a carton can be used. This is a great recipe to make if you have needed to separate eggs to use only the egg yolk for another recipe. Don’t let the extra egg whites go to waste!

How to Separate Egg Whites and Egg Yolks

A really quick way to separate eggs if you are using whole eggs is to crack them all into a bowl and then gently using your fingers, pull out the egg yolks.

The most common way of separating eggs is to crack the eggs in half and bounce the yolk back and forth in the shell until all of the egg white is separated from the yolk. This process works but is not as fast as cracking them all into a bowl at one time.

How to Make Oven Baked Egg Whites

To start, preheat the oven to 350 degrees. Then, spray non-stick cooking spray or olive oil spray into a 12-cup muffin pan or muffin tin. (This can also be made into 24 mini muffins.) Next, chop the roasted red pepper and divide them into the muffin cups. These can be homemade or store bought!

Then, add the chopped bacon and shredded cheese. In a medium-sized bowl, combine the egg whites, salt and pepper. Whisk them to combine well. Pour the egg white mixture over the cheese. Be sure to divide the mixture evenly so they bake evenly.

Bake at 350 degrees for about 15 minutes or until slightly golden on the edges and the eggs are set. Once cooked, remove from the oven and let cool. Either enjoy these egg bites right away or let cool and store in an airtight container for up to 5 days in the refrigerator.

If you decide to save these for a delicious breakfast throughout the week, pop a couple in the microwave for 30-45 seconds when you’re ready to eat them.

Does it matter what size eggs I use for this recipe?

We used large eggs and therefore had large egg whites. If you are using extra large eggs you may just have slightly bigger egg bites or you could use one less. If you use smaller eggs then maybe add one or two extra egg whites.

Can I make these ahead of time?

Definitely! This recipe is perfect for meal prep! I love to make these on a Sunday, let them cool and store them in the refrigerator. This makes it super easy to have a quick, easy and healthy breakfast on hand during our busy mornings.
