How to Make Oven Baked Zesty Lime Shrimp
Making this recipe starts with marinating the shrimp. Combine lime zest, lime juice, salt and olive in a bowl. Stir well to combine. Then, add in defrosted shrimp and stir to coat. Marinate the shrimp for 10-20 minutes.
Preheat the oven to 400 degrees and scoop shrimp out of marinade onto a baking sheet. Do not pour all of the liquid on the baking sheet. Bake at 400 degrees for 5-8 minutes depending on the size of the shrimp.
The shrimp is done when the thickest parts are no longer translucent. The entire shrimp should be opaque. When the shrimp looks like it is getting close keep a good eye on it so it is not over cooked.
Once fully cooked, remove from the oven and serve as desired.

There are two options for defrosting frozen shrimp. Leave it in the bag in the refrigerator overnight or pour shrimp into a bowl of cool water and let defrost. In the bowl of water it should take about 20-30 minutes.
If the shrimp is marinated more than 20 or so minutes it can become mealy. It will not be bad to eat but it will change the texture of the shrimp.
