Pesto Baked Eggs

These Pesto Baked Eggs are a little different from the TikTok version but they are just as delicious. The pesto gives these eggs a nutty, cheesy and tangy taste that will have you making them again and again.

Ingredients for Pesto Baked Eggs

Only a few ingredients are required for this recipe and most are pantry staples… pesto will probably become a staple item for you as well after you try this recipe. You will need:

  • Eggs
  • Milk- any kind (non-dairy works as well)
  • Freshly ground black pepper
  • Basil pesto (try our Homemade Vegan Cashew Pesto)
  • Shredded mozzarella cheese

How to Make Pesto Baked Eggs

To start, preheat the oven to 350 degrees and spray an 8×8 pan with non-stick spray. Then, in a medium sized mixing bowl, crack the eggs and whisk them well. Then, add the remaining ingredients and stir to combine.

Pour the egg mixture into the prepared baking dish and bake for 25-35 minutes or until set in the center. Serve immediately or let cool and store in the refrigerator for a quick breakfast during the week.

These eggs can be served on their own or I like to make them into a sandwich with extra pesto and bacon.

Yes, spray 4-6 ramekins with non-stick spray and divide the egg mixture among them. Bake for 10-15 minutes or until set.

These Pesto Baked Eggs are the light, garlicky and cheesy! Make them for brunch or on a Sunday to have for the week. This recipe is so simple you will come back to it over and over again.

Ingredients

  • 8 eggs
  • 1/4 cup pesto sauce
  • 1/4 cup milk, any kind
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup shredded mozzarella cheese

Instructions
