Smashed Potatoes

Smashed Potatoes… try them, love them! These potatoes are salty, garlicky, and a little crispy. I love potatoes but I feel like I always make them the same way. This was a fun twist on the usual roasted potatoes I would do and they don’t take any more time. Pair these with any main dish you would serve with potatoes!

Ingredients

Only a handful of ingredients are needed for this recipe. Bonus? They are almost all pantry staples! You will need:

  • Baby potatoes- any variety that you like. We used a mixed of red, yellow and purple potatoes.
  • Olive oil
  • Garlic salt
  • Italian seasoning
  • Parmesan Cheese- shredded or grated will work.

How to Make Smashed Potatoes

First, wash and dry your potatoes. Combine the olive oil, garlic salt and Italian seasoning in a bowl. Then, toss them in the oil mixture.

Then, pour potatoes onto a baking sheet that is bigger than you think you need since you’ll be smashing them later.

Bake in the oven at 400 degrees for 20-25 minutes or until they can be easily pierced with a fork.

Remove the pan from the oven and very carefully (so you don’t burn yourself) smash the potatoes. I used a very technical piece of equipment here… one of my small glasses. I used the flat bottom to push down on the potatoes and a fork to slide them off.

Then, sprinkle with Parmesan cheese and return to the oven.

Any variety of baby potatoes will work for this recipe. Think red, butter, purple, whichever are your favorite!

Will these be good without the cheese?

Absolutely! Also, if you are vegan, a vegan parmesan is delicious on these (we’ve tried it)!

Can smashed potatoes be made ahead of time?

Yes! I recommend reheating in the oven at 400 degrees to get the crispiness back. Simply spread them out on a pan and bake until warm and crispy to your liking.

These smashed potatoes are little twist on the classic roasted potatoes. Crispy, cheesy, and garlicky... pairs well with any meal.

Ingredients

  • 2 tbsp olive oil
  • 24 oz little potatoes
  • 1 tsp Italian herb seasoning
  • 1 1/2 tsp garlic salt
  • 1/4 cup Parmesan cheese, grated or shredded

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash and dry potatoes.
  3. In a separate bowl, combine oil, Italian herb seasoning, and garlic salt.
  4. Toss potatoes in oil mixture and pour onto baking dish.
  5. Bake for 20-25 minutes or until easily pierced with a fork.
  6. Remove from oven and smash potatoes with the bottom of a flat glass.
  7. Sprinkle with cheese.
  8. Return to oven for 10-15 minutes or until desired crispiness is achieved.
  9. Serve and enjoy!

Notes

Use caution when smashing potatoes as they will be extremely hot as well as the pan.
