This delicious quiche is created with an easy recipe that only calls for a handful of ingredients. You also have the choice to use store bought or homemade crust depending on how much time you have. For this recipe you will need:
- pie dough- for this we like to either make our own with this easy homemade pie crust recipe or buy the premade Pillsbury pie dough. Store bought pie dough is just as delicious and a huge time saver!
- fresh spinach
- heavy cream- whole milk or half and half can also be used if you do not have heavy cream on hand.
- black pepper
- crumbled feta cheese

How to Make Spinach Feta Quiche
First, preheat the oven to 350 degrees. Then, steam the spinach in the microwave. Place the spinach in a small microwavable bowl and add a couple tablespoons of water. Cover lightly with a lid or paper towel and microwave in 30 second increments until the spinach is wilted. Let cool, drain and squeeze out extra moisture with a paper towel.
In a large bowl, whisk the eggs and add the rest of the ingredients. Set aside and line the 9-inch pie plate with the pie dough. Try one of these fun ways to finish the crust. Pour the quiche filling into the pie dough. Place in a hot oven and bake until set at 350 degrees about 45-60 minutes.

Of course! These would be a great recipe for a brunch dish. We haven’t done this ourselves so I can’t tell you how many you will get however this is how I would do it. Spray a muffin pan with non-stick cooking spray then line each muffin cup with a round piece of pie dough. I would use a 3 inch round cookie cutter. Then, divide the filling among the muffin cups. If necessary, make a bigger batch of filling or pie dough to get your desired amount of mini quiche. Start baking for about 20 minutes and check on them regularly to avoid burning the crust.
